Erik Hanse winner of the Jean Rougié Trophy

The 2024 Jean Rougié Trophy was held on Saturday January 20, 2024 in Sarlat-la-Canéda, under the leadership of Alexandre Couillon, President of the jury, and Keith Pears, Canadian restaurateur and Honorary President.

 

It was the Canadian Erik Hansen who won the trophy for this 14th edition. He faced 7 other candidates, all aged 18 to 23, and accompanied by their teachers.

All of the young participants were evaluated on two different tests: the preparation of a cold dish and a hot dish. The cold dish consisted of an aesthetic and delicious salad, garnished with a jelly or a cold sauce and highlighting the foie gras and truffle. The concept of the hot dish remained secret until 10 minutes before the start of preparation. It was notably based on Saint-Jacques

 

The jury for this cooking competition for rising stars of gastronomy was this year chaired by Alexandre Couillon, 3-star Michelin chef from the restaurant La Marine on the island of Noirmoutier. “I am very happy to see young people who work for the competition, who work and who strive to achieve the best. These are the values ​​of work and this is what I advocate on a daily basis,” he explained.

All the candidates have to mobilize their creativity and technical skills to create two remarkable dishes based on two exceptional products. Well done to them!
